Eating Paleo take 2
Last year my sister told me about the Paleo lifestyle: not eating grains, dairy from cows, or processed sugar. I actually started on a Primal trek which still allowed me to eat butter and some other things that the Paleo line discourages. I lost quite a bit of weight doing it. However, shortly after beginning my journey I became pregnant and began craving carbs. I ditched the Paleo lifestyle and ate all the carbs I wanted while pregnant, and let's just say it was a fairly enjoyable pregnancy as far as what I ate.
But now that I am no longer pregnant, I am looking at getting myself back on track health wise. Not to mention it would be nice to lose the weight that I gained from my last two pregnancies. I am eating Paleo again, but this time it's not just for me. I am nursing and my son has a hard time digesting the milk whenever I eat dairy, so Paleo just makes sense. I even went out and bought the book "Practical Paleo". I haven't really had time to read it, but I am test driving quite a few of the recipes. Below are some pictures of the meals my family and I have enjoyed, more or less, since we began eating this way.

This was from the very first night I started. It's not completely Paleo since we had rice on the side. My husband calls these foil packs. Inside is chopped up beef chunks, three types of peppers and onions.
I have cooked steak probably three times in my life, and this was the best steak I have ever made. I can't remember the seasonings, but I cooked it in a covered roasting pan. The vegetables on the side is actually a Persian dish called Mirza Ghassemi. It's made with eggs, eggplant, and tomatoes. It may not look very appetizing, and it takes a while to make, but it was pretty good.
This was a simple dish; pan seared fish with onions and peppers and salad on the side.
Here we have salad and stuffed Portobello mushroom using a recipe I got from the book and a strawberry banana smoothie.
This delightful dish was breakfast one Saturday morning. It is broccoli and cauliflower soup with bacon on top. I accidentally put in way to much pepper, otherwise I think my son may have eaten it. My husband and daughter, on the other hand, suggested I never make this dish again.
This was actually one of the better meals. It's grilled eggplant, and turkey sausage with spinach. The eggplant took a while to cook because I soaked it in salt water for about 30 minutes, but the way it turned out was totally worth it. After soaking the eggplant you dry it off and then brush it with some olive oil and sprinkle it with salt and stick it on the grill. I used a George Forman grill, but still, very delicious.
This meal tasted great when I ate it, but it left kind of like an after taste in my stomach that makes me think I won't be eating squash or zucchini again anytime soon. It's actually raw yellow squash and zucchini shredded to be like noodles with salt and olive oil. I topped it with some beef I cooked on the grill. The meal itself tasted great, but I have never eaten squash or zucchini raw before and I am not sure I would do it again. Both my kids loved it by the way.
